Here’s another recipe from Janice’s Kitchen Corner – Beef Stew!

I put together this recipe which is quick, easy and delicious. I love easy and delicious recipes. Don’t you? My husband and I love beef stew, a meal all in one dish. With COVID still around after two years we aren’t going out as much as before 2019, I like to make hearty, tasty and easy dishes in my crock pot. I do these especially on Sundays when we are watching a lot of football. The season is winding down but I think I will still do some crock pot cooking until the warmer weather comes. It can’t come fast enough. Here it is only January and I am already looking forward to the spring. Sigh!

I hope you and your family enjoy them as much as we did. I made enough to have for two meals but if you have a family of four this should suffice unless they all want seconds. It is so delicious they just might!

Beef Stew cooking in crock pot

Ingredients

2 lbs beef stew meat

1-2 Tbs olive oil

1 medium onion chopped

2-3 cloves minced garlic

4-5 mushrooms sliced thick

2-3 potatoes in quarters or smaller (I used little potatoes – 12 and cut in halves)

2-3 carrots sliced

2 stalks celery sliced

Green beans cut in half (I used frozen green beans and added last hour.)

2-3 tsp beef bouillon paste or cubes or 1 cup liquid bouillon (I use beef paste – Better than Bouillon)

1 Tbs Gravy Master (browning sauce) There is some of this in the Better than Bouillon though.

Pepper to taste

3/4 cup of burgundy wine or other red wine

1 cup water mixed with 3 Tbs Arrowroot (for thickening) you can use corn starch or flour

Directions:

1. Brown onion and garlic in olive oil in large frypan until translucent.

2. Add chopped beef to pan and sear on all sides.

3. While beef is searing, put crock pot on and add all veggies and liquids and bouillon paste.

4. Add seared meat, onion and garlic mixture to crock.

5. Don’t mix – veggies should be on the bottom so they will get the heat and cook better that way.

6. Put on for 4-6 hours depending on when you want to eat. (I put it on for 6 hrs but the 4 hrs is at a higher heat and will be faster if you want to eat sooner. That is how my crock pot works, so I found out.)

My husband was ready to eat but the veggies weren’t ready so I had to put it back to the 4hrs setting and then they cooked faster.

This should be enough for a family of four. We have enough for two meals for the two of us. Unless your family has some hearty eaters you should have enough to keep them happy. Serve with a crusty bread for dipping. The gravy it makes is delicious!

My husband wanted seconds but I held him at one. Haha! Poor guy! I gave him a dessert instead. We ate ours without bread but bread would have filled him up more. Sigh! Maybe next time he can make rolls for me.
