A Recipe from Janice’s Kitchen Corner – Chicken Chop Suey!

I recently made this recipe – Chicken Chop Suey because my husband has enjoyed it at a local Chinese restaurant that we frequent. I told him that he didn’t have to go there – I could make it even better, so I did. He was pleasantly pleased and enjoyed it!

This recipe can be made by substituting with beef, pork or shrimp also. It was made for two people but can feed three. Add more chicken and veggies to serve more.

This is a quick and easy recipe when you don’t want to spend a lot of time in the kitchen and it is delicious and healthy for the whole family.

Ingredients:

  1. 1/2 boneless, skinless chicken breast (whole breast to serve 4-5)
  2. 1/2 medium onion cut in long slices
  3. 1/2 bag of peapods
  4. 3/4 bag of bean sprouts
  5. 2-3 Tb of arrowroot or cornstarch or flour
  6. 3 stalks of celery cut in strips
  7. 1/2 can water chestnuts
  8. several mushrooms sliced
  9. 1 cup of water or more for more gravy
  10. 2 teaspoons chicken bouillon
  11. 1 Tb garlic flavored olive oil or add one garlic clove and use olive oil

Directions:

  1. Prepare rice or rice noodles or other pasta
  2. Add olive oil to wok pan
  3. Add chopped chicken to heated oil carefully, cook till almost cooked through
  4. Add onions and celery, partially cook until translucent
  5. Add mushrooms, water chestnuts and peapods (should still be crunchy)
  6. Add bean sprouts last so that they won’t be too soft
  7. Add water with arrowroot and mix well
  8. Add chicken bouillon and heat everything through until thickened

Serve over rice or noodles and enjoy!
