I have been making this potato salad for years. It was my mother’a recipe even though I still think she made it better, but I keep trying to get it just like hers.
With the heat we have been having in the Northeast potato salad is a perfect addition to most summer meals. It goes well with burgers, chicken, steak, chops, etc.

Stuffed peppers and stuffed cabbage were HUGE hits in our family. Potato salad, oh yes! I have to share the easiest recipe for potato salad I have ever heard of and tasted (yum) some friends serves it at their wedding receptions. Baby reds, snow peas and sour cream. Their caterer called it yuppie potato salad. Very good, and when I make it for others, most of them agree that it is tasty!
