I recently decided to use some Filo or Phyllo dough that I had in my freezer that I have been holding onto for a special occasion. Well, I couldn’t wait any longer and made it today with my company coming.
I made up my own recipe and wanted to share it with you. They may not look perfect but my dough was getting dry so be careful with yours. They were delicious just the same and crispy.


INGREDIENTS:
- Frozen spinach or fresh
- Feta cheese crumbled
- extra virgin olive oil
- Filo dough
DIRECTIONS:
- Take out one sheet of Filo dough at a time and keep the rest covered with plastic wrap to keep it from drying out. Cut each sheet in half – they are large.
- Baste sheet lightly with olive oil – do not drench or it will tear easily.
- Defrost spinach or wash and dry the fresh spinach and chop into small pieces.
- Place a tsp of spinach onto sheet and add tsp of Feta on top of spinach and wrap it by folding ends inward as you roll the dough.
- Baste lightly top of dough with olive oil to seal the ends.
- Place completed rolls onto wracks in air fryer and put on bake for 5-8 minutes until lightly browned and heated through.
- Enjoy!
If you use a regular oven you may have to adjust the temperature to 375 degrees and cook for about the same amount of time. Check it often though since the dough is so thin it could burn easily.
These make a delicious appetizer but get cold quickly and can be warmed again under reheat on air fryer.
