I made this recipe from my another recipe that I posted online for you – Shrimp Scampi. I tried using the same ingredients and instead of shrimp I added scallops (frozen). It came out quite good. My husband loved it! I enjoyed it too but like the shrimp better. This is a quick and easy recipe for those times that you want something quick and delicious without too much preparation that is also satisfying. Your family will love you for your efforts and praise you for all the hard work to make it. Haha! Just don’t tell them how easy it is. Let them believe it took a long time to prepare. Maybe you can get them to set the table, clear the table and wash the dishes since you worked so hard.



You can click on the recipe link above to see the ingredients and directions of this recipe and just substitute scallops in place of the shrimp. Both are tasty. I used frozen scallops that were good but fresh are even better but more expensive. I think you will enjoy either if you love scallops.
There are many recipes that you can exchange in this way, e.g., chili which can be made with beef, chicken or turkey. I like the beef but will make it sometime with the ground chicken. For variety you just have to mix things up a bit. I also do this with soup. Escarole soup can be made with turkey or beef but of course it will taste completely different. I prefer using chicken since it tastes the best.
I will be making beef stew soon which is in a crock pot. I love to use my crock pot. It’s easy and you just put everything in and forget it for awhile. This gives me time to do everything else that I need to do like writing, blogging, answering emails, working on my WIP, etc.
