A Recipe from Janice’s Kitchen Corner – Fruit Crisp!

I recently made this Fruit Crisp to bring to my sister’s house for a dinner invitation. I usually make apple crisp but since I did not have enough apples I checked my fridge to see what I could substitute. All I had were four nectarines, a handful of strawberries and blueberries. That would have to do.

Here is my recipe for FRUIT CRISP:

Ingredients:

  1. 4 or more nectarines
  2. Blueberries (handful or two)
  3. Strawberries (6-8)
  4. 2 Tbs white sugar
  5. 1/4 cup flour
  6. 1/2 brown sugar
  7. 1/2 cup oats
  8. 1/4 cup butter
  9. 1/4 tsp each of cinnamon, ginger, nutmeg
  10. Dash or two of ground cloves
  11. 1/4 chopped walnuts

Directions:

  1. Peel and slice nectarines and place in 8 x 8 in glass baking dish
  2. Wash blueberries add to nectarines
  3. Wash and slice strawberries add to other fruit
  4. Sprinkle 1-2 Tbs of white sugar over fruit and toss together (I used one Tbs)

Prepare topping:

  1. Add oats, brown sugar, flour and spices to medium bowl
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in nuts.
  4. Sprinkle topping over fruit.
  5. Bake in 375 degrees oven for 30 minutes
  6. Serve warm or cold with ice cream and/or whipped cream
  7. Enjoy!

At this writing I have not tasted it. Hope it is good. But it certainly looks and smells good! Let me know if you try it and like it or not.

For fruit crisp you can use any kind of fruit you like. Have fun creating your own combinations. Another time I may try apple and peach or nectarine together for a twist. Baking should be a fun adventure and memorable whether there are positive or negative results. My husband will eat whatever I make and be happy as long as he can have some ice cream with it!

    I love making fruit crisps but never made one with nectarines! But the last time I made one, all I got were complaints from my kids that I didn’t make a pie!
