Portuguese Fish with Molho!

Here is my recipe for Fish with gravy or in Portuguese (Molho). The gravy is canned diced tomatoes. You may think that tomatoes with fish, I use cod loins or haddock in this dish. I find that cod loins are thicker and hold up much better than the haddock which is thinner.

Here are the ingredients:

  1. Olive oil
  2. Panko
  3. Salt & Pepper
  4. Italian Seasonings
  5. Cod loins (1 lb) (for two)
  6. Small green & red peppers in slices
  7. Small onion in slices
  8. Fresh parsley several sprigs chopped
  9. Can of diced tomatoes in juice
  10. Small potatoes boiled

Directions:

  1. Heat olive oil in frying pan
  2. Mix together panko, salt, pepper and Italian seasonings
  3. Roll cod loins into above mixture to coat all sides
  4. Add Cod to oil and cook on both sides until lightly browned
  5. Remove cod from oil and place on paper towels to remove extra oil
  6. Sauté peppers and onions in oil until softened.
  7. Add chopped parsley to peppers and onions
  8. Add tomatoes to above with a cup of water
  9. Cook until bubbly and tomatoes are softened for 30 minutes
  10. Add fish and boiled potatoes to pan and spoon sauce over it and heat through without stirring for fish will fall apart.
  11. Serve with a side salad or other greens.
  12. Enjoy!

Soup and stew time!

We are in a deep freeze here in New England with temps in the teens and soon below 0. Brrr! I sleep with my warm blanket afghan that I made with Bernat Blanket Yarn. I made one for everyone in the family. With this cold weather I feel the need to make warm and nourishing soups and stews. Do you love making crock pot stews? My soups are made in a large pot as seen below.

In between writing my latest children’s book, I am cooking. My husband is happy that I am taking over the cooking for a while until I get deep into my fantasy series, Gateskin Chronicles Book 4. John knows that once I get into it I will not remember anything else – especially cooking! Sigh!

Pea Soup

Recently I made pea soup (yummy), Portuguese Fish with diced tomatoes, and today I made Escarole Soup (Portuguese style with hard-boiled eggs). This week I will be making, chili, chicken pot pie and beef stew. All these recipes can be found on my Recipe page. I will add the Portuguese Fish sometime today or soon.

Does talking about food make you hungry? Me too! I have test tasted the Escarole Soup a few times to ensure that it is delicious! It past the test!

What are your favorite dishes? I will keep making many of my recipes from my favorites all winter long. Once the warm weather returns John will be taking over and cooking outside again. I think he likes when I cook and don’t have a WIP. Well, I guess it is time to get back to that WIP since the soup is ready for tonight’s dinner.

I hope you enjoy my recipes and try them out on your family. I hope they love them as much as I enjoy making them. I plan to share more soon, e.g., Stuffed Shells or Manicotti. I love Italian food. John makes delicious meatballs and sauce. I use his sauce for my shells and manicotti.

Books Read and Reviewed in December 2024!

Here it is already the end of another month. Where does the time go? I have been busy as usual reading some wonderful books for the month of December of 2024. Here are the 9 books I read and reviewed for December. I might have read even more if I didn’t have a few WIP. But I always seemed to have a WIP! That fact never stops me! I hope you enjoy reading these reviews.

I love sharing my eclectic reads in this Jemsbooks Segment, Books Read in the Month. I hope you will get a chance to look over these books soon. Thank you for your kind support of my work and that of my fellow authors.

Reviews are one way for readers to know about an exceptional book. We indie authors love to receive reviews and appreciate the efforts of readers to do them. Once again, I thank you for your kind support of me and my books and for supporting my fellow authors too.

When I wrote these reviews I rated them on Amazon, Goodreads and sometimes Barnes & Noble. I did not include the ratings here though. It is best to share my thoughts with you about how I felt about the book without the rating. Ratings can be deceiving at times.

We all feel differently about books. Sometimes we love them, sometimes we like them and still other times we may dislike a book. Some other books are so memorable they take our breaths away! While still others are sweet, sensitive, and enjoyable reads that we soon will forget. But all these books I have reviewed were lovely reads as you can see from my reviews. I hope you enjoy my reviews and that they will help you to decide what will be your next read.

Lake County was a tale about Marilyn Monroe and her past reimagined by the author. The author created this clever tale using a famous person.

Norma Jean or Marilyn Monroe lived in a backwoods town and escaped to Hollywood to become a star. She had a boyfriend, a photographer, who was nothing but trouble. He followed her everywhere she went and would not leave her alone.

The story delves into one time when Marilyn revisited her hometown. Her boyfriend followed her and haunted her about returning to Hollywood. He had no life without her because his photos of her help to make him famous. He would not let go of this power that he felt as long as he could control her.

Things got out of hand when her boyfriend, Nix, took things too far and got into more trouble than he ever imagined. He began to blame Marilyn for everything that went wrong in his life. Nix’s actions and involvement caused problems for everyone close to Marilyn.

I don’t want to give anything away by saying any more. This was an enjoyable read that kept me turning pages and imagining what life would have been like for this starlet if this had really happened to her. This was an imaginative and creative story.

Chasing Fame is a Gabe Quinn prequel to this series full of murder, mayhem and suspects. There are Hollywood stars who are murdered just before the Oscars and no evidence as to who is responsible until a crucial mistake is made by the killer.

Gabe is on the chase once he discovers who the killer is and will stop at nothing even endangering his own life. This character is unstoppable as the action ratchets up and keeps the reader avidly engaged.

This author knows how to describe scenes that create vivid impressions in the reader’s mind thus creating an enjoyable reading experience. I look forward to more stories in this series with this intriguing character.

The Curse of the Flores Women is a moving tribute to the resilience and power of seven generations of women who had to survive without the help of any men in their lives due to a curse that killed off all the men who married into their family. The women learned the art of lace in order to make a living for themselves.

Seven generations later Alice discovers the truth behind the mystery of some lace that she received from her ancestor that carried a message intertwined in the lace patterns. She uncovers the secrets that were kept by her ancestors.

This is told through Alice who slowly uncovers the secrets that were kept for many years. A story that was translated from Portuguese to English.

Tracks of her Tears is an intriguing mystery with murder, many suspects and one of the main protagonists on the prowl to find the culprit. There is a county investigator, Seth who enlists the help of his wife Carly who is a social worker to handle a child who is left homeless after her mother is murdered.

Things get out of control when Carly’s brother goes missing and then becomes a suspect in the death of his girlfriend. Though this is a short novella, there is plenty of suspense and action to keep the reader engaged.

This was an enjoyable read which is part of a series. I look forward to the next book in this series.

Dead in Her Tracks is book 2 in the Rogue Winter Series that has motion pictures throughout the book. I read book 1 on my Kindle which could not provide the motion. This book I read on my iPad and used the motion app. I found it fascinating seeing some of the action that was in the story line in motion but I don’t think I would have enjoyed it any less though reading on my Kindle. I enjoyed the first book that way.
It was a different way to read a book though and quite clever.

The main characters are after a serial killer who has already murdered a few women. Once again there are a few suspects but after the main suspect is found murdered in his jail cell, they must look for not only the murderer of this man but also delve deeper to find out if someone else had murdered these woman. Maybe they had made a crucial mistake.

This story was fast-moving and suspenseful. It was an enjoyable read.

I read this on Audible.

Coma Confidential is an intriguing story told through a woman in a coma after she is beaten and raped. She uses her senses of hearing and smell to differentiate sounds and scents and what is happening around her.

This is book 1 in this series as this woman tries to come back to find the person who did this to her. There is non-stop action, danger and adventures that keep the reader glued until the end.

I enjoyed this story and have already read one other book in this series.

The Song of Youth is a sweet, light romance/comedy with an angelic message, engaging characters and a creative story line.

The main character, Emilia, isn’t happy with her life. She feels she has wasted her years and never found love and had a family. Her wish is granted when her guardian angel hears her plea to be young again in order to get a second chance at life. Things aren’t always what they seem Emilia finds out.

An enjoyable light-hearted read.

You Shouldn’t Be Here is an intriguing mystery but lost some of its appeal as the author included a different pronoun to one character making it at first confusing and then unappealing to the story. I wasn’t sure if this character was a male or female or more than one person. I knocked down my original star count with this issue in mind.

The mystery was interesting and unusual with the addition of some strange ghostly connections between two of the characters. Though I enjoyed the story, the issue of confusion over one character took away some of the enjoyment. I unfortunately, I won’t be reading any more books from this author.p

Crossfire was an intriguing mystery. The main protagonist, DI Snow, who is nearing retirement is not feeling up to the task of his exhausting job after his partner is murdered. When a new partner is brought in he doesn’t know whether to trust this new person, DI Ruth Winton. He suspects that she is hiding something with her strange attitude toward everyone especially him.

When there are other murders, Snow tightens up his investigations and begins to connect some of the evidence in the other murders to his partner’s death. He also investigates further into DI Winton and discovers some unexpected things that puts him on alert because he feels that his life is in danger over what he knows.

An enjoyable quick read that kept me interested.

I pray that the new year will be filled with new projects, ideas and stories to share with you. I plan to complete and publish two books but it could be more if I get moving. Since Christmas I have been exhausted from all the planning, preparing and anticipation of everything I had to do to make our family celebrations special. They were wonderful as I shared in another post with you. It must be because I am getting older as we all are. I will do my best to meet my goals and maybe even surpass them.

I know kids nowadays are not into reading as much because of the all the distractions they have with TV, videos, online media, XBox and all the new technology that keeps being introduced. What books give kids that technology cannot is the ability to increase their vocabulary, spark their creativity, stimulate their minds, and elevate their reading levels. All this makes parents happy, I’m sure.

As a mother, grandmother and step great grandmother, I know the importance of keeping children reading today and every day. Everywhere I go I see children and adults with their eyes glued to cell phones. What is our world coming to when no one is interacting with one another? I find it quite sad to see a young couple eating at a restaurant but neither one of them is talking. They are too busy looking at their cell phones. Another time I saw a family with three children all looking at their cell phones and not each other. Are we going to forget how to talk to one another or even read a book? Are books going to become obsolete? I pray this does not happen.

We can change all this by talking and interacting more with each other and encouraging our children, grandchildren to do the same. Take away cell phones at the table, when we have company or go out to dinner. I miss seeing people enjoying one another, laughing or discussing something together. Please help by reading more and setting an example for our children to do the same.

Please consider giving books to all the children on your list for all occasions. There is nothing better than to see a child’s eyes light up when you give him/her a book – even more so when you read the book to them. You are giving them so much more than you could ever imagine, e.g., you spark their imagination, heighten their creativity, lift their spirits, increase their vocabulary, open up a whole new world to them, enhance their health and wellbeing and encourage them to love reading. The gift of a book is worth more than gold to our children, grandchildren. Keep reading and gifting books to children. Let’s bring up a generation of readers and thinkers. What are you going to read in 2025?

Do you have some books in mind to read in the New Year? I have so many books on my Kindle to read that I will not finish them until March or April. I plan to read at least seven books a month or more. How many books do you read in a month?

I am currently working on a new children’s book with six stories in it for children ages 5-8. It will be about friends and family. As all my books for children, it will carry important life lessons about kindness, helping others in need and friends and family matter. Watch for this book coming by March or before.

I am also working on Book 4 of Gateskin Chronicles, a fantasy adventure with plenty of characters, creatures and surprises. If you haven’t read books 1-3, please do so before the next book comes out so that you will be up-to-date on what is happening in Noella Province with King Wizard Gateskin. It is an epic series with myriad characters, lands, happenings and magic.

This is Book 1 of a fantasy series that will have six books in all. In this book learn about the three children of King Gateskin and his wife, Queen Solinara. The children have had powers since they were quite young..

Serena was three years old when she learned of her power to move objects with her mind. Her brother, Simon, can fly and their sister, Catalina, can become invisible or blend into her surroundings. They live with their parents in Sovorotskina, the Land of Light.

With these powers comes responsibility. The children must try to use their powers for the common good and responsibly to help others. The three children befriend a Sprite named Spindle who accompanies them on their adventure. Along the way they meet up with their aunt and uncle, their mother’s brother and his wife, Wizard Hotenfaran and Fairy Procelina. The group must travel into the evil land of Parotovina, Land of Darkness, to save King Gateskin, who was kidnapped, and also rescue some of the descendants of their friends and fellow Sovorotskinans who were captured and taken by the Evil Ones. These descendants have been waiting a long time to be free to return to the villages of their ancestors.

The children have many trials and adventures along the way. Will they be able to rescue their father and fellow Sovorotskinans without endangering their own lives? Will the evil King Kaposkaran and his Queen Beregina stop Serena and her siblings from being successful or will they turn Serena and her siblings to their dark ways?

This is a short story collection for children ages 5-8. They are perfect for bedtime or any time. They can be read by early readers or by a parent/guardian. They will provide a fun reading time for both the reader and the listener.

There are six stories with a colorful illustration of the characters of each story – one about an alien, a dragon, a fairy, a bear, a bear and a boy and a skunk. Each story will have life lessons for children to learn.

Once all the holidays are behind us we can relax and pick up a good book and read and not have to shop, bake or run around. I read no matter what I have to do. I always find time to read and relax. I hope you will too.

Family, food and fun for two successful family celebrations! A very Merry Christmas for all!

Well, now that Christmas is behind us I can relax a little. Here are some photos of this year’s and past Christmas celebrations’ food offers. Each year there are always plenty to eat for family that keeps growing. We have so much fun and the kids love when Santa stops by to give them each a present. I love watching them open them and how excited they are. I also give them a book each year. This year I crocheted pillows for the younger ones. They enjoyed receiving them too since they are so soft and fluffy and make great snuggling.

It’s wonderful seeing the family together each year and all the babies who are growing so fast. My family gets together three times a year – Easter, Thanksgiving and Christmas. We appreciate these precious times together.

Each year Santa comes to see all the children and bring them a gift each. He even gives each adult a $2 scratch ticket. Santa reads The Night Before Christmas and everyone sits and listens. At the end of the party we have a $25 grab for all who want to participate.

Our prayers go out to those who are no longer here, friends and others. May they rest in peace.

I hope you and yours had a wonderful and blessed Christmas. Wishing you a healthy & Happy New Year in 2025! May the Lord send many blessings your way. May He bless all those who are in need and give them peace. I pray each day for that who are less fortunate and support many who can provide these people with food, shelter and medical care. I pray for the victims of the hurricanes that they will have a place to call home soon and be safe. May God bless them all.

A List of Christmas Blessings!

I thought it was time to send this beautiful, emotional and heartfelt poem around once again for Christmas in order that more readers would be able to see it.

A long-time friend of mine, who I haven’t seen in ages but keeps in touch with me by snail mail, sent me this beautiful poem by an Unknown Author for Christmas.

I wanted to share it with all of you because it touches on how I feel about all who have touched my life in a positive way. Please accept this as a Christmas gift to all of you out there who have supported and helped me in some special way over the past year or so. You know who you are! Thank you!

My Christmas List of Blessings


My Christmas List is more than just a way to keep track of

The special people God has brought into my life to love.

It’s like a treasured scrapbook filled with pleasant memories

Of all the times God’s answered prayers through friends and family.

Every name’s a touchstone that leads to a place and time.

Where God has used another’s heart to reach out and touch mine.

It may have happened years ago or even yesterday.

But every person on my list has changed my life some way

Through simple conversation, a warm hug or a shared meal.

Every person on my list has helped me grow or heal,

Or laugh or love or learn or smile….

The Blessings never end.

As God allows our paths to cross as family and friends.

So please know that this greeting is more than a Christmas wish.

It’s a “thank you” card to God for putting you on my list
